In the cellar
24 months on lees; traditional bottle fermentation
An imagined wine story, created for our fictional catalog.
Hearth & Horizon 2023 is our fictional expression of Sparkling Chenin from Clarksburg. Its tasting profile starts with yellow apple, quince, lively bubbles. The imagined producer, Hearth & Horizon Cellars, works toward a wine that feels at home with food: expressive on the first pour, then more detailed as it settles into the glass. This bottle gives the collection a distinct starting point without asking you to commit your whole case to one style.
A fine, persistent mousse lifts the fruit and gives the palate an airy opening. Fresh acidity provides the structure, while a soft, savory note adds depth through the finish. The intended style is dry and food-friendly, with the bubbles contributing texture rather than overpowering the wine.
For this fictional bottling, a second fermentation in bottle is followed by extended time on lees. That rest is imagined to build the gentle biscuit character and integrate the mousse. A restrained finishing dosage keeps the overall impression bright while giving the palate a rounded edge.
Chill well, open gently and pour into a tulip-shaped glass with room for the aromas to gather. Try it with salted almonds, crisp vegetable fritters or a savory pastry. The combination of acidity and texture makes it useful beyond a first toast, especially with lightly fried or creamy dishes.

Everyday versatility
Lively and approachable
Yellow apple and quince make an inviting combination, and the bubbles give the profile an energetic shape. This feels easy to place at an informal table. It is more about clear fruit than a deeply toasted character.

Sparkling & mousse
Fruit at the center
The lively mousse carries apple and quince without a strong biscuit note taking over. I like the directness. The texture is less creamy than some of the other sparkling profiles, which makes it a useful contrast.

Aroma & spice
Quince gives it character
The quince note distinguishes this from a simple apple-led sparkling wine. It adds a firmer aromatic edge while the bubbles keep the opening bright. I would use a slightly wider glass to make the most of that fruit detail.
